Lemon Blueberry Chia Jam – All natural jam recipe that takes 5 minutes to make. Made with fresh picked blueberries straight from the farm. Blueberry season is in full swing here in Southern Illinois, so today I am sharing a Lemon Blueberry Chia Jam recipe. Recently I went with my husband and daughter to the local orchards to pick some blueberries. The berries are so much bigger and have a better taste than store bought ones. This jam recipe has only 4 all natural ingredients. It’s loaded with tons of healthy goodness and is delicious. Plus, it is extremely easy to make! Unlike most jams, this recipe seriously takes about 5 minutes to make. Your friends and family will think you slaved for hours.
This jam is made with lemon zest and juice, blueberries, local honey and chia seeds. The blueberries and chia seeds both contain antioxidants which help prevent or delay cell damage and also help to improve memory and revive your skin. Chia seeds also are rich in omega 3 fatty acids, protein, fiber and calcium. Local honey helps relieve seasonal allergy symptoms. I’d say that’s some serious healthy benefits packed into some seriously tasty jam! It’s good for us runners and our sore muscles.
I enjoy eating the jam on my morning english muffin. It would also be great on pancakes and toast. This recipe makes a small batch, so I never have to worry about the jam going bad because it is all ate in just a few days. I guess you could freeze it, if you really wanted to.
*For this recipe I froze fresh picked blueberries but you can use already frozen berries from the store.
- 1 cup frozen blueberries
- 1/2 lemon – juice and zest
- 2 to 4 tablespoons honey
- 2 tablespoons chia seeds
- In a large sauce pan over low heat, combine frozen blueberries, juice and zest of 1/2 lemon and honey.
- Mash berries with a fork until broken down to a consistency you prefer.
- Add chia seeds and mix well.
- Pour jam into 125 ml jar and refrigerate for 1 hour to set.
