Hello there! Today I am sharing a refreshing Berries and Coconut Smoothie Bowl recipe. Have you ever heard of a smoothie bowl before? It’s basically a smoothie that you make with your favorite smoothie ingredients and put it into a bowl and top with fresh ingredients. There are various recipe options on how to make a smoothie bowl, but today I am using some of my favorite summer berries and coconut flakes. This pretty breakfast smoothie bowl can be kept in the refrigerator in a well sealed container for a couple of days.
I just love summer berries and I thought I would make a red, white and blue smoothie bowl in honor of the Fourth of July. For this smoothie bowl recipe I am using raspberry, blueberries and large coconut flakes. Basically what you want to do is make a smoothie in a large blender. For my smoothie bowl I am using 10 oz of raspberries, 1 cup of water, 10 oz of blueberries, 1 cup light coconut milk, 1/4 cup of chia seeds, and 1/4 cup of honey. You want to blend the raspberries and water together, then blend the blueberries and coconut milk together. Then add the two fruit purees together and stir in chia seeds and honey and set aside for 10 to 15 minutes to thicken. Add raspberries, blueberries and coconut flakes to the top of your smoothie bowl for color and added flavor.
Just a note: I like to pick fresh berries from local farms when I can. I like to freeze the berries that are not eaten in time. The frozen berries are perfect for making smoothies. You can also use frozen berries from the store.
