If you are here checking out this slow cooker pulled pork tacos recipe, I really hope you like pulled pork because this recipes makes a whole lot of it. You can use the pulled pork for tacos, enchiladas, quesadillas and more. Since this recipe makes a lot, you can eat on it all week, freeze it, or its great for large potlucks. I recommend using a 5 to 7 pound pork shoulder. For this recipe I used a 7 pound bone-in Boston butt. I rubbed my homemade taco seasoning on the pork and added onions, garlic, and chicken broth. That is it for the pulled pork. Just cook it for 8 to 10 hours on low or 4 to 5 hours on high.
Once the pork is fully cooked, remove the meat and place it on a cutting board. Use a knife to chop the pork into shredded pieces for tacos. Make sure to remove the bone before chopping the pork. While the pork is cooking, it makes a beautiful orangish-red color from the chili powder and paprika from the taco seasoning.
To build the tacos, I start by heating soft tortilla shells in a pan on the stove. Then I added some of the pulled pork, chopped cilantro, red cabbage, Mexican white cheese, and lime juice. The tacos are so juicy and fresh. The flavors are amazing and I just can’t get enough. SO good!
