I serve my fair share of pastas and salads but sometimes you crave something hearty and lavish. The beef tips are cooked all day in the crockpot, basking in their own gravy developing layers of flavors while I am out running errands and doing mom duties. So when I finally get home, dinner is already made!

Ingredients you’ll need to make hearty Beef Tips in the Crockpot
Beef
- 1 Tablespoon olive oil
- 2 pounds stew meat or chuck roast cut into 1 inch cubes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- ½ teaspoon garlic powder
Mushrooms and Gravy
- 2 Tablespoons butter
- 1 yellow onion diced
- 1 Tablespoon minced garlic
- 12 ounces mushrooms sliced
- 1 teaspoon dried Italian seasoning
- 3 cups beef broth
- 1 Tablespoon Worcestershire sauce
- 1/4 cup water
- 3 Tablespoons cornstarch
Let’s make the Beef Tips in the Crockpot
This crockpot recipe does require a little prep work before placing all of the ingredients in to cook, but I promise the final result is worth it.
Equipment needed for this recipe include a skillet and 6 quart crockpot.
- Chunk meat into 1 inch cubes, season with salt, pepper, and garlic powder.
- Heat 1 tablespoon olive oil in a large skillet over medium high heat, and add beef to skillet, browning it on all sides, but do not cook throughout. I like to use thongs to pick up the meat to sear on all sides. Transfer beef to a 6-QT crock pot. Leave juices in the skillet for the next step.
3. Add 2 tablespoons butter, to the juices in skillet, and add in your onions, minced garlic and mushrooms. Quick sauté for 3-5 minutes until mushrooms start to release their juices. Transfer mushrooms, onions, garlic, and any juices to the crockpot and stir in with the beef.
4. Add dried Italian seasoning, beef broth, and Worcestershire sauce to the crockpot and stir all the ingredients together.
5. Place lid on slow cooker, and cook on high for 3-4 hours or on low for 5-7 hours, until beef is tender. Taste and season with additional salt and pepper as needed.
6. 30 minutes before it is done cooking, mix together in a small bowl the water and cornstarch. Stir it into the crockpot and allow it to thicken.
7. Serve over mashed potatoes or pasta.
What to serve with the beef tips
It seems the like most logical choice would be mashed potatoes. Why? Because the creamy, buttery potatoes soak in all of the juices from the beef tips making a delicious gravy.

If you are looking for a little green on the plate, a healthier option would be a salad. Don’t forget green beans or broccoli are great side dishes too.

Will the stew meat be tender?
The crockpot does a good job a tenderizing meat. Stew meat is generally a fatter cut of meat and by cooking it low and slow it breaks down the fat resulting in fork tender beef.
What kinds of mushrooms can I use?
Cremini or button mushrooms are equally great for this recipe and both varieties are mild in flavor. Creminis are simply the brown version of white button mushrooms. Make sure you wash and clean the mushrooms before you slice them.
Can I leave mushrooms out of the recipe?
Yes, you can, but you will be loosing all of the delicious earthy flavors that the mushrooms give to the recipe. Also, if you omit the mushrooms just note that the constancy of the gravy will be different.
What if my gravy doesn’t thicken?
Sometime it’s hard to calculate how much cornstarch slurry you need to thicken the gravy. It depends on how much juice the meat and mushrooms release.
First, make sure you start by using a couple of tablespoons of water to stir in with the cornstarch. Do not add just the cornstarch dry to the gravy, or it will end up clumping. If your gravy hasn’t thickened after 10 minutes, add more cornstarch slurry.
Can this recipe be made ahead?
To prepare ahead of time cut the meat, mushrooms, onions, and garlic ahead of time. Store separately in airtight containers until you’re ready to brown the meat and make the gravy recipe.
