OK guys, Today I am sharing my ALL TIME favorite casserole ever! Broccoli Cheese Rice! As a kid going up this was my favorite side dish at family Thanksgiving dinner. Your probably thinking, kids like to eat broccoli? Yes they do especially if it has Velveeta cheese in it.
With Thanksgiving just a couple of weeks away, you will want to put this casserole on the menu. It is so so good, you can make a whole meal just out of it. You cook all the ingredients in ONE pot and bake it off in the oven. This casserole is also vegetarian so everyone at your Thanksgiving dinner can enjoy.
- 1 large family size bag of frozen broccoli
- 1 cup minute rice
- 1 pound Velveeta cheese
- 1/4 cup milk
- 1 can cream of celery soup
- 6 TBS butter
- 1/4 cup chopped white onion
- In a large pot on the stove, cook the bag of broccoli with 2 tbs water until the broccoli is soft and fully cooked. Place the broccoli into a greased 9 x 13 casserole dish.
- Cook 1 cup of minute rice on the stove according to the directions on the box. *I use boil in a bag rice which takes 8 to 10 minutes to cook. Then, place the rice in the casserole dish on top of the broccoli. Spread out evenly.
- Melt Velveeta cheese, milk and celery soup in the same pot on the stove. Once it is melted and smooth pour over the broccoli and rice.
- The last step on the stove top is to melt the butter and cook the chopped onions until they are soft. Pour into the casserole dish.
- Cover the casserole dish with aluminium foil and bake for 40 minutes at 325 degrees.
- Remove the foil and bake under the broiler until the cheese is browned or about 5 minutes.

2. Cook 1 cup of white minute rice in the same pot according to box directions. I use boil in a bag rice which takes 8 to 10 minutes to cook. After the rice is cooked, pour evenly over the broccoli.
3. Melt 1 pound of Velveeta cheese, 1/4 cup milk and 1 can cream of celery soup in the pot. Pour evenly over the broccoli and rice.
4. Melt 6 TBS stick butter and 1/4 cup chopped onion until the onion is soft. Then pour into the casserole dish.
5. Place aluminum foil over the casserole and baked covered for 40 minutes at 325 degrees. Then remove the foil and place under the broiler until the cheese is browned or about 5 minutes.
This Broccoli Cheese Rice Casserole will be the star of your Thanksgiving dinner!
