My all time favorite cake is carrot cake and I just had to make a healthier version. I have been on a smoothie kick lately because they are easy to make and I can add lots of fruits and vegetables that I normally wouldn’t eat. This carrot cake protein smoothie is super healthy and just like the real deal. You are definitely going to want to make this recipe over and over again.

Carrot cake is typically made with carrots, crushed pineapple, coconut, cinnamon, raisins, nuts and spices. I added most of these staple ingredients into the smoothie recipe and I have to tell you that this recipe is legit. The best part is that it’s healthy but doesn’t skimp on flavor. One tip I have for making smoothies is if you have bananas that are going bad, I like to slice them, place in a plastic bag, and lay flat in the freezer. Then you can just pull out the frozen banana when you are ready to make a smoothie.
- 1 medium banana, peeled, diced and frozen
- 1 large carrot, diced
- 1/2 cup carrot juice
- 1/2 cup coconut milk
- 2 tablespoons vanilla protein powder
- 1/4 teaspoon ground cinnamon
- pinch of all spice
- optional toppings: toasted coconut
- Add all ingredients to a blender and pulse for 30-60 seconds until smooth. If the smoothie is too thick, add an extra 1/4 cup of carrot juice to thin it out.
- Serve immediately, garnished with optional toppings if desired.
- *If you don’t have a high-powered blender, you may have to blend this smoothie for a bit longer. Or you could also shave the carrots (instead of dicing them) beforehand to make blending easier.
