It’s September which means fall is here! HOORAY! These Cranberry Orange Muffins are a perfect breakfast or a great treat for sitting on the porch, drinking some coffee and enjoying the crisp fall air. Sounds like heaven to me. Not to mention these muffins even taste like fall. They are incredibly delicious!
There is something about cranberries and oranges together that I just love. The taste and flavors are out of this world. Let’s get to the recipe!
For the ingredients you need: 2 cups all purpose flour, 1/2 cup sugar, 1 teaspoon baking powder, 1/2 teaspoon salt, 1 cup dried cranberries, 1 egg, 3/4 cup freshly squeezed orange juice, 1 teaspoon orange zest and 1/4 cup melted butter.
Start by preheating your oven to 400 degrees. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Gently stir in the dried cranberries. In a smaller bowl or stand mixer, beat egg, melted butter, orange juice and zest. Add the wet ingredients to the large bowl of dry ingredients, stir until combined. Line a muffin tin with cupcakes liners. Spoon the mixture into the cups about 3/4 full. Bake for 15-20 minutes or until slightly brown. Remove from oven and serve.
This recipe makes 12 cranberry orange muffins.
