Cinnamon Waffles with Apple Cider Syrup

- Cinnamon Waffles:
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- ½ brown sugar
- 2½ teaspoons ground cinnamon
- 4 teaspoons baking powder
- ¼ teaspoon salt
- 1¾ cup milk
- ½ cup canola oil
- 1 teaspoon vanilla extract
- 2 egg whites
- Apple Cider Syrup:
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1 cup apple cider
- 1 tablespoon lemon juice
- 2 tablespoons butter
- To make the syrup, stir together sugar, cornstarch, and cinnamon in a medium saucepan.
- Stir in the apple cider and lemon juice.
- Cook over medium heat until the mixture begins to boil and boil until the syrup thickens.
- Remove from heat and stir in 2 tablespoons butter until melted. Set aside while making waffles.
- Preheat your waffle maker as directed.
- In a large bowl, whisk flour, granulated sugar, brown sugar, cinnamon, baking powder, and salt together until no lumps remain.
- Pour milk, canola oil, and vanilla extract into the flour mixture, stir until just combined.
- Beat egg whites until foamy in a glass or metal mixing bowl until soft peaks form.
- Fold the beaten egg whites into the batter.
- Pour batter into preheated wells. I use a ¼ cup measuring cup to pour the batter.
- Close the lid and cook 4-6 minutes or until the waffles are golden brown.
- Pour the warm syrup over the waffles to serve.
