Cinnamon Waffles with Apple Cider Syrup

Ingredients
  • Cinnamon Waffles:
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ brown sugar
  • 2½ teaspoons ground cinnamon
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 1¾ cup milk
  • ½ cup canola oil
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • Apple Cider Syrup:
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup apple cider
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
Instructions
  1. To make the syrup, stir together sugar, cornstarch, and cinnamon in a medium saucepan.
  2. Stir in the apple cider and lemon juice.
  3. Cook over medium heat until the mixture begins to boil and boil until the syrup thickens.
  4. Remove from heat and stir in 2 tablespoons butter until melted. Set aside while making waffles.
  5. Preheat your waffle maker as directed.
  6. In a large bowl, whisk flour, granulated sugar, brown sugar, cinnamon, baking powder, and salt together until no lumps remain.
  7. Pour milk, canola oil, and vanilla extract into the flour mixture, stir until just combined.
  8. Beat egg whites until foamy in a glass or metal mixing bowl until soft peaks form.
  9. Fold the beaten egg whites into the batter.
  10. Pour batter into preheated wells. I use a ¼ cup measuring cup to pour the batter.
  11. Close the lid and cook 4-6 minutes or until the waffles are golden brown.
  12. Pour the warm syrup over the waffles to serve.
