Sausage and Veggie Frittata

Ingredients
  • 1 cup pork sausage
  • 1 Tbsp coconut oil
  • ¼ cup chopped white onion
  • 2 cups baby spinach
  • ½ cup cremini mushrooms
  • ½ cup chopped red bell pepper
  • 4 eggs
  • 2 Tbsp almond milk
  • 1 tsp sea salt
Instructions
  1. Preheat over to 350 degrees. In a 8 inch cast iron skillet brown pork sausage over medium heat. Remove from skillet and drain.
  2. Add the coconut oil to the skillet and saute the onion, spinach, bell pepper and mushrooms until soft. Add the sausage back to the skillet.
  3. In a separate bowl whisk eggs, almond milk and salt.
  4. Add the egg mixture to the skillet and cook 3-5 minutes until the bottom of the frittata has set.
  5. Place the skillet into the oven and bake 10-15 minutes. Once cooked through turn the broiler on and cook an additional 2 minutes.
  6. Skillet will be extremely hot so be careful when serving.
