Good Morning! How are y’all doing today? My daughter started preschool last week and this is a new season in our lives. She has been home with me the last four years and now she is venturing out into the real world. With this new step comes a new schedule and let me tell you I have been dragging. I’m not used to having to go somewhere everyday. Today I am sharing a recipe for Fatigue Fighter Muffins. These muffins are loaded with lots of good ingredients that will hopefully help you to shake off being drained.
If I haven’t had my cups of coffee in the morning or didn’t get a good nights sleep, I am usually feeling fatigued and tired around 2 to 3 pm in the afternoon. I try to grab a healthy snack to help give me a boost of energy and these fatigue fighter muffins are prefect for that. They are high in protein, calcium, complex carbs and vitamin C. These muffins have just the right amount of sweetness that will get you going the rest of the day. This recipe can also be made the night before and ready for your breakfast the next day. They go great with a cup of coffee, tea or glass of water.
These fatigue fighter muffins are jam packed with lots of healthy and yummy ingredients.
- 1 cup whole wheat flour
- 1/2 cup old-fashion oats
- 1/2 cup flaxseed meal
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup honey
- 2 eggs, lightly beaten
- 1 cup plain yogurt
- 1/2 cup orange juice
- 1 tsp vanilla extract
- 2 tsp finely grated orange zest
- 1 cup chopped dried apricots (approximately 5 oz)
- 1/3 cup plain granola
- Preheat oven to 375 degrees F. Coat 12 muffin cups with non-stick cooking spray.
- Combine flour, oats, flaxseed meal, sugar, cinnamon, baking powder and salt in a large mixing bowl. Whisk until all ingredients are incorporated.
- In a separate bowl, combine honey, beaten eggs, yogurt, orange juice, vanilla extract and grated zest. Whisk until all ingredients are incorporated.
- With your hands, make a well in the center of the dry ingredients. Pour the wet ingredients into the well and stir until just combined. Gently fold in apricots.
- Fill prepared muffin cups two-thirds of the way full. Sprinkle the tops with granola.
- Bake 18 to 24 minutes or until center spring back when touched.
These fatigue fighter muffins can be stored in an air tight container for several days. I hope you enjoy the muffins and they help give you some boost of energy.
