Hello there! I am really excited to share my Mother-In-Law’s recipe for Lemon Lime Pear Jello Salad. This is probably one of my favorite recipes she makes. This jello salad is soo good, y’all. It’s sweet and tart and amazing. Just look how beautiful it is. Plus, anything that has cream cheese in it is delicious! This is such a refreshing jello salad that is perfectly served anytime of the year.
I believe the first time I had this jello salad was at my In-Law’s for Christmas years ago. My husband’s side of the family is from Austria/Germany. They have rather interesting or should I say different food recipes than my southern cooking background. Don’t get me wrong, stuffed cabbage and pork shank are rather great foods, but somewhat of an acquired taste. So, when my Mother-In-Law made this jello salad, it was something I could chow down on. I instantly feel in love with the flavors. It has lemon and lime jello, canned pears and cream cheese. The texture is so smooth and dreamy.
Did I mention this recipe is super easy? Well, it definitely is. Just put all the ingredients into a blender and let it go! You want to blend until nice and smooth. Then just pour the mixture into a large bowl or individual bowls for serving and refrigerate over night. I thought it would be pretty to garnish the jello salad with lemon and lime zest and lemon slices. The jello has such a beautiful and refreshing mint green color. Don’t you think? This recipe would be perfect for Spring and Summer. You can serve it right along with dinner like my Mother-In-Law does or serve as an invigorating dessert. It is just so gorgeous and so delicious! You have got to try and make it.
- 4 oz cream cheese
- 1 - 29 oz can of pears
- 1 - 3 oz box lemon jello
- 1 - 3 oz box lime jello
- 1 1/2 cups boiling water
- Microwave the water for approximately 3 minutes or until the water is boiling.
- After the water is to boiling, place it along with the cream cheese, both jello mixes and canned pears into a large blender. Add as much pear juice as will fit.
- Blend until smooth.
- Pour into a large bowl or individual serving bowls, cover with lid or plastic wrap and refrigerate over night.
- *Optional - garnish with lemon and lime zests and sliced lemons.
