Peanut butter and jelly is kind of my thing. Growing up I always took a PB & J sandwich in my school lunch and when I was pregnant with my daughter I ate them almost every day. I have tried to make it a bit healthier with this recipe for Peanut Butter and Jelly Smoothie Bowl. Made with just a few ingredients, this smoothie bowl can be ready in minutes. And it’s so good!
I love strawberry jelly. Don’t get me wrong, I like the traditional grape jelly but there is just something about sweet strawberries that I enjoy even more. For this peanut butter and jelly smoothie bowl, I am using my favorite strawberry jelly as well as fresh and frozen strawberries. I think the strawberries pair very nicely with the peanut butter and it is so pretty to look at.
To cut down on smoothing making time, I use a bag of frozen strawberries and bananas that are already washed, cut, and in the same bag. Frozen fruits make smoothies thicker and also colder than non-frozen fruit. I add my favorite milk (1%), low-fat Greek yogurt, and a big heaping tablespoon of peanut butter along with strawberry jelly.
You can top your smoothie bowl with all kinds of goodies. I personally like slices of fresh strawberries, chopped peanuts, a dollop of strawberry jelly and a drizzle of melted peanut butter. You could also add granola for a nice crunch.
- 1 1/2 cups frozen strawberries and bananas mix
- 1/2 cup low-fat milk (I used almond milk)
- 1 tablespoon creamy peanut butter
- 1 tablespoon strawberry jelly
- fresh strawberry slices
- chopped peanuts
- strawberry jelly
- melted peanut butter
- Place smoothie ingredients into a large blender, and blend until smooth. Pour the smoothie mixture into a bowl and add topping if desired.
- To melt peanut butter, place in a microwave safe container and heat on high for 30 seconds. *Peanut butter will start to harden after time.
