Good morning! Fall is quickly approaching and I am gearing up for all things pumpkin. This is my favorite time of year for so many reasons but I especially love the food. All the spices and cinnamon and of course, and pumpkin everything. Today I am sharing a smoothie recipe based on the classic pumpkin pie. This Pumpkin Pie Smoothie Bowl is made with healthy ingredients that tastes just like the fall pie.
If you have never heard of a smoothie bowl before, you basically make a smoothie in the blender, pour it into a bowl and sprinkle with your favorite yummy toppings. They are the most delicious and beautiful smoothies you will ever eat. Smoothie bowls are slightly thicker than regular smoothies since you eat it with a spoon. If you have never made one before you have got to try this pumpkin pie smoothie bowl. It’s like eating fall on a chilly morning. Basically, it’s the best thing ever!
First I started by dicing one ripe banana into one inch round pieces and placing it into a freezer bag and freezing overnight. I think freezing the banana gives the smoothie a nice texture and keeps it cold. Then you add all of the smoothie ingredients including the banana, pumpkin puree, almond milk (or you favorite milk), pumpkin pie spice, cinnamon, vanilla bean or extract and flax seeds. Blend until all combined and smooth. Pour your smoothie into a small bowl. I drizzle on honey for sweetness and then top the smoothie with coconut flakes, organic coconut nibs, sliced almonds and flax seeds.
This pumpkin pie smoothie bowl recipe should make two to three small bowls.
- 1 ripe banana, diced and frozen
- 1/2 cup pumpkin puree
- 2/3 cup to 3/4 cup cup of almond milk, depending on thickness
- 1 teaspoon pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1 vanilla bean or 2 teaspoons vanilla extract
- 1 tablespoon flax seeds
- Drizzle on honey
- Unsweetened coconut flakes
- Organic cocoa nibs
- Sliced almonds
- Flax seeds
- Place frozen banana, pumpkin puree, milk, spices, vanilla and flax seeds into a high speed blender. Blend until well combined and smooth.
- Pour smoothie into two to three small bowls.
- Top with desired toppings.
