A few years ago, I stumbled upon a similar red lentil soup recipe, and it’s become one of our go-to dinner options. Here’s why:
- Red Lentils cook in a very short amount of time and require no pre-soaking like other beans do.
- Lentils are low in calories, virtually fat free, but very filling because of their high fiber content. They also contain protein making them the main source of nutrients for this soup recipe.
- They have a velvety texture – perfect for purées and soups. You can blend lentils to soups or stews to make them creamy without the cream.
- I can make one batch during a busy weeknight, in one pot which makes cleanup super easy.

Red Lentil Soup Recipe:
Ingredients
1 cup red lentils
1 Tbsp. olive oil
1 large onion, chopped
5 cloves garlic, minced
1 Tbsp. minced ginger root
1 Tbsp. ground cumin
¼ tsp. cayenne pepper
1 15 oz. can of crushed tomatoes
4 cups vegetable stock
salt and pepper to taste
1 lemon
Directions
1. Rinse the lentils very well until the water runs clear.
2. Heat oil in a medium pot and sauté onions, garlic and ginger for 5 minutes until soft. Add a pinch of salt.
3. Add ground cumin and cayenne pepper and stir for another minute or so, until fragrant.
4. Add canned tomatoes, 3 slices of lemon and rinsed lentils, then add vegetable stock. Stir well.
5. Cover and bring to a boil. Reduce heat to simmer for about 30 minutes, or until the lentils are soft. Squeeze in the rest of the lemon juice.
This soup recipe will make a big enough batch for four people. If you have a larger family, you can double the recipe.
